When you change the talkgroup in self-care, it only changes the talkgroup that your hotspot is tuned to, not the radio.  The radio will receive transmissions from the newly tuned talkgroup but retains the channel information programmed into it from its codeplug.

So, if you key up, the radio will use that information and bring you back to the original talkgroup programmed into that channel.

On some radios with certain firmware, you can temporarily override the programming by hitting keys to ad-hoc to the talkgroup being transmitted by the hotspot.  Or, if you have the talkgroup already programmed into a channel, you can just switch to it and your next transmission should go out there.

Hope that all makes sense.
